Almond Banana Bread

🍌 Almond Banana Bread Recipe (Recipe #84)

Ingredients:

  • 1 cup almond flour
  • 2 cups brown (whole wheat) flour
  • 2 overripe bananas
  • 2 eggs
  • 1 cup milk
  • 100g butter (melted)
  • 1 pinch salt
  • Vanilla essence (a few drops)
  • 3 teaspoons baking powder

Method:

  1. Preheat oven to 150°C (300°F).
  2. Mash bananas in a large bowl until smooth.
  3. Add melted butter, a pinch of salt, and vanilla essence. Whisk well.
  4. Add milk and eggs to the bowl, and continue whisking until fully combined.
  5. Sieve in the almond flour while whisking, then slowly sieve in the brown flour until you achieve your desired batter consistency.
  6. Add the baking powder and mix well.
  7. Let the batter rest for 20 minutes — this allows the flours to hydrate for a softer texture.
  8. Pour into a greased or lined baking tin.
  9. Bake at 150°C for 30 minutes, or until a toothpick inserted comes out clean.
  10. Allow to cool slightly before slicing and enjoying!
