Almond Banana Bread
🍌 Almond Banana Bread Recipe (Recipe #84)
Ingredients:
- 1 cup almond flour
- 2 cups brown (whole wheat) flour
- 2 overripe bananas
- 2 eggs
- 1 cup milk
- 100g butter (melted)
- 1 pinch salt
- Vanilla essence (a few drops)
- 3 teaspoons baking powder
Method:
- Preheat oven to 150°C (300°F).
- Mash bananas in a large bowl until smooth.
- Add melted butter, a pinch of salt, and vanilla essence. Whisk well.
- Add milk and eggs to the bowl, and continue whisking until fully combined.
- Sieve in the almond flour while whisking, then slowly sieve in the brown flour until you achieve your desired batter consistency.
- Add the baking powder and mix well.
- Let the batter rest for 20 minutes — this allows the flours to hydrate for a softer texture.
- Pour into a greased or lined baking tin.
- Bake at 150°C for 30 minutes, or until a toothpick inserted comes out clean.
- Allow to cool slightly before slicing and enjoying!
